Snickerdoodle

"I'm using Priority Mail Flat Rate boxes and free Carrier Pickup so I can hide out and make Snickerdoodles."  Just what is a Snickerdoodle?

1/2 cup shortening
1/2 cup butter
1 1/2 cup sugar
2 eggs
2 3/4 cup flour
2 tsps cream of tartar
1 tsp baking soda
1/4 tsp salt

For the top:
1/4 cup sugar
2 teaspoons ground cinnamon

Heat oven to 400ºF.
  • Mix 1 1/2 cups sugar, the butter, shortening and eggs in large bowl. Stir in flour, cream of tartar, baking soda and salt.
  • Shape dough into 1 inch balls. Mix 1/4 cup sugar and the cinnamon. Roll balls in cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheet.
  • Bake 8 to 10 minutes or until set.

    I made Snickerdoodles on Christmas Eve, and they are very good. I would alter the recipe by eliminating the shortening, in favor of all butter. Also, I chill the dough and the baking sheet, to keep them from spreading too much. Otherwise, forming them into 1-inch balls and baking them 2 inches apart might cause them to grow together into 1 big cookie!

    400 degrees is very hot for baking, also; my recipe calls for 350.
